Before AppLovin shows any ad, you need:

A free AppLovin account
AppLovin approves your account (can take a few days)

If you stop half-way nothing breaks: AppLovin simply does not bid, and Google keeps filling your ads as before.

You will copy these into AdMob:

Steps

Create a free account at dash.applovin.com/signup and confirm your email.
In the AppLovin dashboard open Account > Keys and copy your SDK Key (and the Report Key if you will also use waterfall).
For bidding nothing else is needed on AppLovin's side; for waterfall go to Monetization > Zones > Create Zone, choose Android as Platform, pick the Ad Type, click Save and copy the Zone ID.
In AdMob go to Mediation, click Create mediation group (or open one), choose the format and Android, and add your ad units.
In the Bidding card click Add ad source and pick AppLovin (use the Waterfall card instead for banner or app open).
Accept the partnership/agreement prompt AdMob shows for AppLovin and continue.
Click Add mapping, enter the SDK Key (waterfall also asks Bundle ID and Zone ID), click Done, then Save.
Add AppLovin Corp. to the GDPR and US state regulations ad partner lists in AdMob and add AppLovin's lines to your app-ads.txt.

Watch out for

Bidding does not cover AppLovin banners in AdMob; put banner/app open in the waterfall card or AppLovin will never serve those formats.

The adapter disables AppLovin automatically for child-directed apps / users under the age of consent (AppLovin does not support children).

Copy the SDK Key from Account > Keys exactly; a Report Key or zone id pasted in the SDK Key field silently gives zero fill.

AppLovin dashboard > Account > General > App-ads.txt Info lists your lines; also register your developer website root domain under Account > General > Basic Info. Format: 'applovin.com, <your ID from that page>, DIRECT' (copy the exact string; AppLovin shows no fixed certification ID in its example).

Who pays you

check your agreement (Google's guide does not say; if AppLovin is a direct-pay source AdMob asks you to acknowledge that when you add it, and you then set up payments in the AppLovin dashboard).
